Why this works
An open-faced sandwich almost always fails in the same place: it gets soggy. The solution is a layer of fat between the bread and the topping. Fat repels water and blocks moisture from migrating into the bread. This is the same reason butter goes under the cold cuts and not next to them. The second building block is the toasting itself. It draws water from the surface and forms a firm, aromatic layer via the Maillard reaction, which acts as an additional barrier. And the crown, meaning acid, heat, and herbs, comes at the end because it should not be cooked. Lemon juice evaporates on hot bread, herbs wilt, and both are exactly what should wake up the bite.
