Cook the quinoa
Rinse the quinoa thoroughly with hot water, as this removes the slightly bitter saponins on the surface. Then put it in a pot with twice the amount of salted water and let it simmer for about 15 minutes until the grains pop open. Remove it from the heat and let it steam off briefly, so it becomes fluffy instead of mushy.

Fry the chicken
Season the chicken breast fillets all over with smoked paprika, salt and pepper. Fry them in hot olive oil for 6 to 7 minutes per side until golden brown. Let the meat rest for a few minutes afterwards before you slice it, because this keeps the juices in the fillet instead of on the board.

Mix the dressing
Stir the tahini with lemon juice, honey and cold water until smooth. Do not be surprised if the mixture becomes firm and clumpy at first, this is normal, and with further stirring it will become silky and creamy. Season it to taste with salt and cumin.

Assemble the bowl
Put the quinoa as a base in two bowls and arrange the chicken, edamame, avocado, tomatoes and cucumber on top in beautiful segments. Finally, drizzle the tahini dressing generously over it. If you like, take a quick photo now before everything is mixed together.
